Pinterest Kitchen Week 3 – Swedish Raspberry Kiss Cookies
Oh, I love to sit in my relaxing corner, on my little piece of grass, pillows, cozy lights… and a plate of delicious cookies!
This is winter about, isn’t it?!;)
When you have an urgent craving for something sweet, the best solution is to open Pinterest and find a delicious and easy recipe!
That way I found this Swedish Raspberry Kiss Cookies recipe and I had no doubts about baking it immediately!
Yield: 1 1/2 – 2 dozen cookies depending on the size of ball you make.
7 ounces of real butter softened ( 7 ounces is the same as 14 tablespoons)
1/2 cup sugar
1/3 cup cornstarch (you can add a little more if you feel like the dough is too sticky)
1 1/2 cups flour
1/2 teaspoon baking powder
Mix it into a soft dough. Refrigerate until chilled. Roll into small balls and press your thumb to make indents. Spoon 1/2 teaspoon of jam into the indent.
Bake at 375 degrees Fahrenheit for 10-15 minutes (depending on your oven) Be careful not to let them brown.
As always I couldn’t resist changing a few things to make it healthier, so to eat it without guilt.
If you fancy to bake a healthier/diet version, here is some help:
I used xylitol instead of sugar.
Instead of normal flour, I added 1 cup oatmeal and 1/2 cup grated coconut.
Cornstarch was substituted by organic manioc starch.
And finally because of the texture of oatmeal and coconut, I was using a tiny bit less butter (about 5 ounches).
I guess they turned-out slightly different than the original ones, but they were super delicious and we destroyed it all in no time!
