Coconut-Almond-Blueberry Raw Balls
Since we are living in Stockholm I’ve stopped baking/cooking my usual favorite desserts, mostly because I’m still discovering the supermarkets and the ingredients they’re selling. I have lot trouble finding the same sweeteners, flours what I was using at home.
But same time I’m experimenting some pretty cool new treats and my new favorites are the raw balls!
They are not only super healthy energy bombs, but pretty easy and fast to prepare!
The other day I made these coconut-almond-blueberry raw balls and they were something delicious!
It’s a completely a new experimental recipe of mine, I love to be spontaneous when I’m in the kitchen, so I’ll share the ingredients with you, but please note that I haven’t got the time yet to develop a super accurate recipe!;) But I think they’re still yummy!
I measured everything with a 1dl measuring cup, but I convert them into grams for you.
(for app. 10 pieces)
- 100 g coconut flour
- 100 g almond flour
- 50 g raisins
- 1 piece of fig
- 100 g blueberries (a few extra piece to use in the middle of the balls)
- 2 tbsp xylitol (or any other sweeteners)
- 1/4 ml black coffee
- a plate of shredded coconut
First mix the dry ingredients, then add the fig, raisins, blueberries, xyliotol and coffee in the food processor. Process them until you get a nice texture that is not too dry and not too liquid, just perfect enough to form bite sized balls out of the dough.
When you prepare the balls, don’t forget to hide a blueberry in the middle and give them a roll on a shredded coconut plate to coat them.
